Healthy Carrot Tomato Soup

There is nothing like soup. It is by nature eccentric: no two are ever alike, unless of course you get your soup in a can.

Ingredients:

  • 2 fresh carrots
  • 2 fresh tomatoes
  • 1 medium sized chopped onion
  • 3-4 chopped garlic cloves
  • water
  • fresh coriander leaves for garnishing

Method:

  • Rinse tomatoes and carrots. Peel the carrots and onion. Chop the vegetables into small pieces.
  • In a pressure cooker add carrots, tomatoes, onions, garlic and 2 cups of water. Stir all the vegetables properly and cook it for 2-3 whistles to make the vegetables cooked properly.
  • Leave the pressure cooker for some time. Once the vegetables become warm blend them in a blender to make a smooth paste.
  • In a pan heat some oil, add cumin powder and salt. Stir for a few seconds. Add the vegetable puree to this and allow it to boil for 2-3 mins. If the Soup is thick add some water or if the soup is thin boil it for more 2- 3 mins.
  • Garnish the soup with some fresh coriander leaves and sprinkle a little pepper powder. Healthy carrot and tomato soup is ready to serve.

Healthy and Delicious Sweet Corn soup

Sweet corn Veg soup is easy and healthy creamy soup recipe made with sweet corn kernels and indo Chinese sauces.

It is a great party starter or party appetizer recipe and can be served just before the meals.

It is simple and easy to make soup recipe and can be made with basic ingredients available in most of the Indian kitchens.

INGREDIENTS:

For corn paste:

  • ½ cup sweet corn
  • 2 tbsp water

For soup:

  • 3 tsp olive oil
  • 2 clove garlic (finely chopped)
  • 1 inch ginger (finely chopped)
  • 4 tbsp spring onion (chopped)
  • ¼ cup sweet corn
  • ¼ cup carrot (finely chopped)
  • ¼ cup beans (finely chopped)
  • 3 cup water
  • ¾ tsp salt
  • 1 tsp pepper
  • 1 tsp vinegar

INSTRUCTIONS:

  • Firstly, in a large kadai heat 3 tsp olive oil and sauté 2 clove garlic, 1 inch ginger.
  • Also, sauté 2 tbsp spring onion slightly.
  • Now add ¼ cup sweet corn, ¼ cup carrot and ¼ cup beans.
  • Sauté for 2 minutes or until vegetables are slightly cooked.
  • Transfer the sweet corn paste and sauté for 2 minutes.
  • Further add 3 cup water, ¾ tsp salt and stir well.
  • Cover and boil for 15 minutes or until the vegetables are well cooked.
  • Now prepare a corn flour slurry by mixing 1 tsp corn flour in ¼ cup water.
  • Mix to a lump free mixture.
  • Pour the corn flour slurry and stir well.
  • Stir and boil until the soup thickens.
  • Now add ¾ tsp pepper, 2 tsp vinegar and 2 tbsp spring onion.
  • Finally, enjoy sweet corn soup garnished with spring onions.

And……….the Delicious Sweet Corn Soup is ready!!!!!!!

Protein Rich Soup

Yummy Dal soup having full of protein and healthy tastysoup.

Ingredients:

  • Green Gram dal 1 cup
  • Carrot 1
  • Onion 1
  • Coriander for garnish
  • Fresh cream 1 tbl spoon
  • Black paper powder 1 tea spoon
  • Asafoetida 1 tea spoon
  • Sugar ½ tea spoon
  • Salt
  • Turmeric powder ½ tea spoon
  • Butter 1 table spoon

Method:

  • Rinse dal, carrot, coriander with water
  • Finely chop onion carrot and coriander
  • Keep pan on stove add butter after melts add onion and carrot stir fry until golden colour
  • Add 1 cup of water in dal add Asafoetida turmeric powder and above mixture carrot keep it in cooker pressure after 2 whistles  keep flame off
  • Blend the cooked mixture until smooth
  • Add sugar, black paper powder salt as per taste
  • Serve it with decoration of fresh cream and coriander on top
